Pesto




We LOVE fresh pesto at our house! The past couple of years we have grown our own basil so making the pesto is pretty convenient. And it's so easy to make. It also freezes really well so you can still have fresh pesto in the middle of the winter.

This recipe is actually from a neighbor in my old ward Barb Elder----thanks Barb!

PESTO

2 cups fresh basil
2 TBSP pine nuts (I have also used walnuts before)
2 cloves garlic
1/2 tsp salt
pepper to taste
1/2 cup grated parmesan
1/4 cup grated romano cheese
2/3 cup olive oil
2 TBSP butter

Blend all ingredients together in a food processor.

Note: I also will use ONLY parmesan since I don't normally keep romano on hand. Still tastes great!

I freeze the pesto in small batches so it stays as fresh as possible. It also stays fresher looking if you keep a small layer of olive oil over the top.

Last weekend was Orem's Homecoming dance. And, once again, Alan Bailey took the pictures for Finn's group. This year they went up the canyon to Vivian Park. They were so lucky to have such beautiful weather!

Bonneville Salt Flats




Kurt has been busy shooting year-end videos for work the past couple of weeks.  He happened to have me working for him the day they headed to the Salt Flats. I remember going there when I was a little girl. What a weird place! My brain couldn't quite wrap around the fact that all the salt for miles in every direction looked like snow but the weather was 80+ degrees and sunny.

BYU Autumn Classic

Montana had her second UVU meet on Friday. How nice that it was around the corner at Cascade Golf Course!  It was fun to be able to watch cross country after not watching any meets last year. I forgot how nervous I get! She did great and even got a PR.

Back on the wagon


I did not read one book the entire summer. How in the world did that happen??? I'm not exactly sure really. It's so out of character for me. I think part of the reason is that I hadn't had any good recommendations from anyone. But, ever since book club a few weeks ago, I have a whole slew of new books on my list and I'm so excited! I have already read the top one in the picture above and 3/4 of the way through the bottom one. I'm back at it baby!

It seems like the other 3 kids have been in school FOREVER! Really it's only been a week or two. So today was finally Indy's day. He was a little nervous about finding his way around. I reassured him that he won't be the only one who might get lost. Can't wait to hear how it went....
